It's been a long week but the Christmas break is in sight and I can't wait for some gentle days with an extra pair of hands around to help with my little ones. If you haven't managed to make and create as much as you'd hoped this December then fear not, take these ingredients for a Fizzy Amaretto Sour to wherever you're celebrating and I promise your hosts/guests will forgive you. This recipe originally came from the Simple Things Magazine (a subscription makes a great present) and has become a family favourite over the last few years, no Christmas would be without it now.
Mix 2 shots of Amaretto, 1 shot sugar syrup and 1/2 a shot of lemon juice over ice in a cocktail shaker. Fill a glass with ice, strain the mix and top up with prosecco. Add a cherry to garnish.
This year as we've got thirteen for Christmas dinner, I'm going to cheat a little and use a pre-made still lemonade, as it's basically the lemon juice and sugar syrup already mixed. I'll mix everything in a jug before adding to these pretty glasses ( I get mine from charity shops whenever I see them) and topping up with prosecco.
